Mouse droppings and filthy working conditions were fund in the production area when council inspectors visited the Sunrise Bakery in Smethwick in October last year.

Copeland Drummond, aged 64, of Girton Road, Cannock, has now pleaded guilty to 15 charges against the health and safety regulations.

The floor, wash basin and PVC strip curtains were dirty, the ceiling was found to be greasy, and dirt and food debris were found in the bread slicer machine and the legs of the preparation tables, Wolverhampton Magistrates Court heard.

It was also said that mouse activity, poor cleaning and inadequate washing facilities gave rise to risk of food contamination and that the owner had failed to ensure his staff were properly supervised and trained in food hygiene.

Drummond’s basis of plea was not accepted by Sandwell Council and the case was adjourned until January 31 for sentencing.
